In the heart of San Germano dei Berici, Sauro Maule created a winery that celebrates the connection between land and wine. Here, among rolling hills and vineyards, his passion for wine transformed into a tangible project. After attending the Trentin Agricultural Institute in Lonigo and working on his family farm, in 2008 Sauro returned to Vicenza to pursue his dream: producing quality wine. Renting vineyards and replanting family plots, he began to realize his vision. The true turning point came in 2010 when Angiolino Maule introduced him to the world of winemaking. In 2011, his first wines, Granselva and Cà Lombarda, marked the beginning of an exciting and authentic journey dedicated to enhancing the Berici territory.

Sauro Maule’s vineyard philosophy is based on a biological and natural approach. Every plot receives meticulous care: pruning and thinning are carried out by hand each year, ensuring the health of the plants and grapes. He avoids pesticides and chemical substances, relying only on minimal treatments with copper and sulfur. Harvesting is strictly manual, conducted during the coolest hours of the day and in multiple passes to select the ripest and healthiest grapes. This commitment to sustainability is reflected in vineyards teeming with life, where each bunch grows in harmony with its environment.

In the winery, Sauro Maule allows the grapes to express themselves freely. Fermentations are spontaneous and non-invasive, without the addition of commercial yeasts or chemical agents. Steel tanks are used for fermentation and wooden barrels for aging, maintaining a minimalist approach. Sulfur is employed only when necessary, ensuring each wine reflects the uniqueness of its vintage. The winemaking techniques are designed to preserve the purity and character of the grapes, producing wines that tell stories of terroir and passion. The result is an authentic sensory experience, capable of moving anyone fortunate enough to taste his labels.
