Whisky Mexicano Prieto y Prieta
Whisky Mexicano Prieto y Prieta is a unique spirit made from corn native to the valleys of Oaxaca, offering an extraordinary sensory experience. Its creamy texture and dry finish reveal notes of maple syrup and cherries, while a slight acidity and subtle tobacco undertones emerge in the aftertaste. This whisky is the result of complex maturation, in which four types of corn and contact with French oak, American oak and Mexican sherry casks give Prieto a distinctive character, combining compelling flavours reminiscent of earth and subtle spices.
The Mexican Whisky from the brand Prieto y Prieta represents a refined Mexican interpretation of one of the most famous spirits in the world, characterized by irresistible spicy and exotic fruit sensations. The brand Prieto y Prieta was launched in 2018 by the production company Koch, operating in the state of Oaxaca, with the aim of producing a high-quality whisky that expresses the essence of the culture and character of the Oaxaca territory. Pursuing this goal, the distillery decided to entrust the production to the expertise of Txomin Alcorta, a French master distiller specialized in the production of cognac and the art of aging in wooden barrels.
Prieto y Prieta Mexican Whisky is made from a selection of four different corn varieties native to the valleys of Oaxaca, including Bolita purple corn, Conejo white corn, Chalqueño yellow corn, and Tepecintle red corn. After careful mechanical processing, the grains are mashed and undergo alcoholic fermentation in stainless steel tanks, at the end of which the fermented liquid is subjected to distillation through copper stills. At this point, the liquid is aged in three different types of oak barrels: new French oak barriques, second-pass American oak barrels, and American oak barrels previously used for sherry maturation.
The color of the Mexican Whisky Prieto y Prieta is golden yellow tending towards amber. On the nose, there are sweet and fruity notes, conferred by the white and yellow corn, combined with earthy perceptions given by the red and purple corn, as well as aromas of coconut, vanilla, and spices due to the wood aging. The taste is soft and full-bodied, almost creamy, characterized by enticing sensations of maple syrup, cherries, and tobacco.
