Hinotori's 5-Year Blended Whisky is a fragrant and elegant Japanese distillate made by a small producer. The distillery's symbol is the phoenix, 'Hinotori' in Japanese, a symbol of rebirth and vitality. A mixture of grain grains and malt are carefully selected to produce the base wort, whose fermentation is followed by a short passage in used casks. The Whisky Blended 5 Years from the Japanese brand Hinotori is a fine and elegant distillate that expresses all the skilled craftsmanship of the small Hekinan distillery, located in Aichi Prefecture, in the central-southern part of Honshu Island. The Japanese term “hinotori” means “phoenix,” a mythological animal symbolizing rebirth, also depicted on the label. Behind the choice of the brand name lies the story of Hekinan, a sad story but with a happy ending. Just a few years after its founding in 1949, the distillery was forced to halt its activities due to two natural disasters. However, in 2019, after 70 long years, Hekinan resumed production, like the phoenix rising from the ashes, deciding to celebrate the event by launching the Hinotori brand in a limited edition.
Hinotori Whisky Blended 5 Years Hekinan comes from the combination of barley malt, corn, and wheat. The distillation of the malt ferment occurs in a copper still specially designed by the distillery.Hekinan. The subsequent aging of the distillate lasts at least 5 years and takes place in Mizunara Japanese oak or white American oak, always of multiple passes. The whisky is finally bottled in limited production without any cold filtration and without the addition of colorants.
Upon visual examination, the Whisky Blended 5 Years Hinotori from Hekinan Distillery shows a light mahogany color with orange reflections. The nose impresses with its sensations of walnut, vanilla, and barley malt, enriched by fruity and floral hints. The taste is rich and round, very elegant, with a finish of pleasant freshness and softness in which the sweet notes previously perceived on the nose return.
