The Vino Santo Trentino "Arele" by Cavit is a historic regional specialty, made with the indigenous grape variety Nosiola in purity. It is an ancient wine, already famous in past centuries, when it was served as a precious nectar on the tables of the Austro-Hungarian royal courts. It is a passito with balanced sweetness, well balanced by freshness, making the sip particularly smooth and pleasant. A true excellence of Trentino tradition, it is offered in a prestigious version, made with high-quality grapes from the most suitable areas of the region.
“Arele” is a Vino Santo Trentino resulting from Cavit's great knowledge of the territory, the most important cooperative reality in Trentino. The Nosiola vineyards are cultivated in the historic area of the Valle dei Laghi, right at the foot of the alpine peaks. The area enjoys the best conditions for ripening healthy grapes. For the creation of this small jewel of Trentino tradition, only the best bunches are selected, those more scattered, healthy and ripe, particularly suitable for drying. The harvest takes place in October, at an advanced stage of ripening and the bunches are laid out on the racks, called arèle, for drying. After 5 or 6 months in the drying room, the dehydrated grapes affected by Botrytis Cinerea are subjected to a gentle pressing. The must ferments very slowly and the wine ages for 5 or 6 years in small oak barrels, before completing the refinement with 10 months in the bottle.
The Vino Santo Trentino "Arele" Cavit is a passito rich in aromas, which seduces with its finesse and elegance. It is excellent to taste with dry pastries or almond paste desserts. To be tried with a platter of flavorful and aged cheeses. In appearance, it has a beautiful bright antique gold color, with slight amber reflections. Complex and intense, it presents a palette of fascinating aromas, reminiscent of dried fruit, almond, sultana grapes, the softness of multifloral honey, ripe yellow fruit, candied citrus peels and dehydrated apricot. The sip is gentle and seductive, with a soft and enveloping entry on the palate, warm and rich. The aromas, harmonious and persistent, unfold in a long and satisfying sip. The finish is very balanced and characterized by a pleasant freshness.
