Pievalta introduces the Verdicchio dei Castelli di Jesi Classico Riserva ‘San Paolo’, a label with a full and mineral taste made exclusively in the best vintages. This winery, located within the municipality of Maiolati Spontini, in the province of Ancona, was founded in 2002 by the renowned sparkling wine producer Franciacorta Barone Pizzini with the aim of embracing the production of Verdicchio, one of the most important white grape varieties of the Peninsula. Three years later, in 2005, the entire estate converted to biodynamic agriculture, driven by the desire to offer the most authentic expression of the territory while preserving its health and delicate balances.
Pievalta Verdicchio dei Castelli di Jesi Classico Riserva ‘San Paolo’ is a 100% Verdicchio grown under certified organic practices, integrated with biodynamic methods, in the San Paolo vineyard of Jesi, on Monte Follonica. Here the soils, located at 350 meters above sea level, are made up of limestone, clay, and sand. In the winery, the bunchesare subjected to a gentle pressing and the resulting must undergoes spontaneous alcoholic fermentation between stainless steel tanks and large 25 hectoliter oak barrels. The subsequent maturation period lasts about 20 months and takes place between steel, cement, and large barrels. Finally, 6 months of bottle aging follow before the commercial release.
The Verdicchio dei Castelli di Jesi Classico ‘San Paolo’ Riserva has a straw yellow color with greenish highlights. Rich and complex is the olfactory panorama, defined by intense hints of yellow fruit, citrus, tropical fruit, jasmine, aromatic herbs, and almond, supported by finely mineral perceptions. Good structure and softness on the palate, with a lively fresh-salty verve that leads to the long saline finish.
