Clase Azul produces its Tequila Reposado from raw materials grown in the highlands of Jalisco, in the northwestern region of Mexico. After the extraction of the sugary aguamiel, through crushing and grinding of the piñas, fermentation is conducted by yeasts developed within the distillery and the cooking process lasts for 72 hours in traditional stone ovens. The distillation in discontinuous copper stills is followed by a period of aging in ex-bourbon American oak barrels for at least 8 months.
Clase Azul Tequila Reposado showcases an intense golden hue, brightened by vibrant solar reflections. The aromas it offers evoke lush equatorial worlds, introduced by the peculiar notes of agave syrup and candied orange peel, then shifting to the spiciness of vanilla and the warmth of American oak. The sweetness of cinnamon and banana flesh perfectly blend with the soft hints of the tasting, where toasted sensations of hazelnut and the dark pungency of clove emerge, within a medium-bodied structure. A spirit with a very characteristic flavor that can accompany bold meat dishes, such as a shoulder or pork ribs, paired with a sour sauce; an excellent pairing is also aged cheeses, particularly pecorino or smoked provolone, served with honey mustard or ancient-style; alongside dessert, a chocolate mousse will stand out remarkably next to it, with hazelnuts and orange peels.
