The Reposado Tequila from the Mexican distillery Cascahuin is characterized as a articulate and deep tequila, attributes largely due to the aging in American oak barrels that this distillate undergoes. The tradition of the Cascahuin production reality dates back over 100 years, precisely to 1904, the year in which Salvador Rosales Briseño founded the distillery in the state of Jalisco, the most important and historic for tequila production. The Reposado category was introduced in the tequila production regulations in 1968 and requires a minimum aging of 60 days in oak barrels.
The Reposado Tequila Cascahuin comes from carefully selected blue Weber agave plants. The agave is harvested by hand at full maturity, a process that takes 8-10 years, and is then cleaned to extract the sugary core, called “piña” due to its appearance resembling that of a pineapple. The piñas are cooked in traditional stone ovens and the agave is then shredded before the alcoholic fermentation in stainless steel tanks. Once the fermentation process is complete, the mass is then subjected to a double distillation in copper and steel stills, and the precious liquid is subsequently aged for 6-8 months in old American white oak barrels used for over 20 years in tequila aging. Throughout the entire process, the use of additives is excluded and the tequila is diluted with pure water to lower the alcohol content.
The Reposado Tequila Cascahuin has a bright straw yellow color. Sweet hints of honey, caramel, and vanilla characterize the olfactory profile along with sensations of cooked agave. Velvety and balanced taste, marked by a long persistence consistent with the olfactory perceptions.
