The Sylvaner "Praepositus" is a enveloping and elegant white wine, with warm and mineral nuances, aged for 6 months in acacia barrels. It releases rich aromas of citrus, white flowers, and yellow fruit against a delicately smoky backdrop. The taste is fresh, savory, incisive, and persistent.

The Sylvaner ‘Praepositus’ from the Abbazia di Novacella winery is an Alto Adige bottle that fully expresses the fresh and mineral soul of the territory. Within the Abbazia di Novacella, wine has been produced since as far back as 1142, making this winery one of the oldest in the world. The focus of production is on white grape varieties of Austrian and German origin: Riesling Renano, Grüner Veltliner, Kerner, Müller Thurgau, and, indeed, Sylvaner, an ancient variety native to Central Europe that the premium ‘Praepositus’ line aims to enhance.

Abbazia di Novacella ‘Praepositus’ Sylvaner comes from the homonymous white grape variety cultivated within the Bressanone basin on soils made up of permeable moraine deposits, consisting of mica schist, paragneiss, and quartzite. The vines are between 15 and 20 years old and are located at an altitude of 650-750 meters. Once the harvest is completed, the grapes are gently pressed, and the obtained must is sent for alcoholic fermentation at controlled temperature,60% in stainless steel tanks, 30% in 30-hectoliter acacia barrels, and 10% in French oak barriques. The maturation phase lasts 10 months and takes place in the same types of winemaking containers.

‘Praepositus’ Abbazia di Novacella Sylvaner has a pale straw yellow color with green-gold reflections. The nose offers aromas of citrus, ripe pear, apricot, and white flowers, enriched by vegetal and smoky notes. A warm and elegant sip, fresh and subtle, characterized by a long mineral persistence. Although delightful already in youth, the Sylvaner ‘Praepositus’ can evolve gracefully and harmoniously for several years. It is recommended to pair it with flavorful seafood first and second courses, risottos, or even white meats.
