The Metodo Classico Extra Brut Riserva “1919” is born in a historic cellar in South Tyrol. Since the early decades of the 1900s, Kettmeir has cultivated the vine and produced quality wines in the Caldaro area. Today, it manages about fifty hectares and is one of the most important names in the region's sparkling wine production. The vineyards of Chardonnay and Pinot Nero are grown in the hilly area of Oltradige and Bassa Atesina, at an altitude ranging from 400 to 700 meters above sea level.at sea level. The predominantly limestone soils, with clay presence and the cool, breezy climate, have proven perfect for obtaining excellent sparkling bases. At the end of the harvest, the grapes undergo cryomaceration for one night and are then softly pressed. The winemaking occurs separately for the two varieties. 20% of the Chardonnay matures in barrique, while the rest and the Pinot Nero are in steel tanks. After creating the blend, the second fermentation in the bottle is carried out according to the Metodo Classico, with a resting period on the lees of 60 months before disgorgement.
