"Il Mattaglio" is born from Christian Bellei's great love for Champagne and its wines. The vineyards are located in Riccò di Serramazzoni, in a beautiful hilly area at about 650 meters above sea level, with sunny exposures. The vines are planted in calcareous-clay soils, surrounded by large wooded areas that help create a cool climate with good temperature excursions. Despite the different latitude, the area has some similarities in microclimate and soils with Champagne. Starting from these inspirations, in the '90s, cuttings were planted that were purchased in France. After manual harvesting, soft pressing is carried out and the must is sent for fermentation in steel tanks.state planted cuttings purchased in France. After the manual harvest, soft pressing takes place and the must is sent for fermentation in steel tanks. The base wines rest in steel for a few months and the sparkling process and second fermentation occur in the bottle according to the Metodo Classico. The minimum aging period on the lees before disgorgement is 24 months.
The Metodo Classico Brut "Il Mattaglio" from Cantina della Volta surprises with its extraordinary finesse and expressive freshness. It is a pure Chardonnay entirely played on the notes of finesse, which has nothing to envy from more famous labels. The color is straw yellow with greenish reflections. The perlage is fine and has good persistence. The bouquet expresses aromas of orange blossom, citrus notes, yellow fruit, and mineral nuances. The sip is lively, with delicate fruit and a pleasant savory vein, extending towards a finish of great freshness.
