The sparkling wine reality Casa Caterina presents the Metodo Classico Spumante Extra Brut ‘36’, a pure Chardonnay that stands out for vivacity and pleasantness. The number ‘36’ on the label refers to the months of aging on the lees in the bottle, a period capable of enhancing the complexity and structure of the sparkling wine. The Extra Brut dosage further contributes to the expressive purity of this Blanc de Blanc, even more enhanced by the use of only grape must in the dosage process, a practice on which the sparkling philosophy of the Del Bono brothers is based.

The ‘36’ Spumante Metodo Classico Extra Brut from Casa Caterina originates from only Chardonnay grapes grown according to highly environmentally respectful agriculture, inspired by biodynamic practices. The bunches, hand-picked, are vinified in white through soft pressing and subsequent spontaneous alcoholic fermentation of the must, for 90% of the mass in stainless steel tanks and for the remaining 10% in oak barrels. The sparkling process takes place in the bottle according to the Metodo Classico, with the addition of frozen must as a source of sugars for yeasts. After 36 months of aging sur lattes, the sparkling wine finally undergoes the disgorgement à la volée, followed by the final marketing without any dosage, filling the bottles with the same wine. Throughout the entire process, the use of invasive additives and enological aids is excluded.

The Spumante Metodo Classico Casa Caterina Extra Brut ‘36’ has a bright straw yellow color with very fine perlage. The nose, broad and delicate, presents pleasant perceptions of citrus, yellow-fleshed fruit, and sage, enriched by hints of sweet spices and bakery. Elegant and creamy on the palate, well supported by sapidity and freshness, with a progression of good intensity and long persistence.
