Amaluna is an Extra Dry Charmat Sparkling Wine that surprises with the citrus freshness of its aromas and the fruity richness of its scents. It is born in Puglia, in the deep heart of Salento, in the vineyards of Tenuta Due Palme, which cultivates lands in the countryside of the area of Cellino San Marco, north of Lecce. It represents a pleasantly new face compared to the classic production of Puglia, revealing not only an unsuspected sparkling vocation of this territory but also the extraordinary versatility of the Negroamaro grapes vinified in white, to create an appealing Charmat Method.
The Extra Dry Amaluna Sparkling Wine is produced with Negroamaro grapes harvested early at the end of August, in order to create sparkling bases with the right degree of freshness. As soon as the grapes arrive at the winery, they are destemmed and then gently pressed. The free-run must, after a static clarification, is sent for fermentation with selected yeasts in temperature-controlled steel tanks. The sparkling process and the second fermentation are carried out in autoclave using the Charmat or Martinotti Method, in order to preserve the fragrance and immediacy of the varietal aromas of the grape. After refrigeration at -4°C to promote the decantation of the wine, bottling takes place, and it is sealed with the classic cork stopper and metal cage.
The Extra Dry Amaluna is a harmonious and delicately fruity sparkling wine, which makes freshness and pleasantness of drink its winning cards. The white vinification of Negroamaro gives us an unusual and particular version of this grape variety, highlighting its interesting expressive plasticity. In the glass, it presents itself with a bright straw-yellow color, crossed by a delicate and fine perlage. The bouquet expresses subtle aromas of white flowers, citrus peel, white fruit, and more mature aromas of pineapple, banana, and exotic fruit. The attack on the palate is soft and balanced with intense fruit and pleasant final freshness. A perfect Sparkling Wine to accompany an aperitif or a light appetizer.
