Exclusive wineryTermen 00' is a Semi-sparkling white produced by Bival, a winery that has been producing sparkling wines in Valdobbiadene for generations. The label in question is a version of the classic Colfondo, in which the wine is fermented in the bottle after the addition of fresh must. It is possible, in fact, to find some residues of the fermentation at the bottom of the glass. The Sparkling White Refermented ‘Termen 00’ from the Veneto winery Bival is a bottle-refermented wine with a fragrant style, of exceptional drinkability. Located in Guia, a fraction of the municipality of Valdobbiadene, the family-run estate Bival has been dedicated for over 70 years to producing wines that can express the distinctive qualities of the prized Valdobbiadene territory, an absolute excellence in the field of Prosecco. For this purpose, the Biasiotto family, owners of the winery, focuses exclusively on indigenous grape varieties, Glera first and foremost, cultivated on the famous Rive, plots located on the steep slopes of the hills that shape the enchanting landscape of Conegliano Valdobbiadene.
The ‘Termen 00’ Bival Sparkling White Refermented is made from only white grapes harvested exclusively by hand between the second and third decades of September. In the winery, the must obtained from the soft pressing of the bunches undergoes spontaneous alcoholic fermentation in stainless steel tanks at a controlled temperature of 20 °C. This is followed by refermentation in bottle, which takes place in spring through the addition of fresh must preserved from the harvest as a source of sugars. The yeasts then settle to the bottom, giving rise to the so-called “Colfondo” type.
The ‘Termen 00’ Bival Sparkling White Refermented has a straw yellow color. On the nose, there are fragrant fruity and floral notes reminiscent of banana, pear, green apple, and white flowers, accompanied by hints of acacia honey and mountain herbs. A fresh and dry sip, endowed with a marked mineral verve enhanced by the light effervescence. The producer's suggestion is to pair this bottle-refermented wine with typical cheeses and cured meats from Trevigiana, such as soppressa.
