The Praepositus is one of the most famous examples of Sauvignon produced in Italy and owes its fame to the extreme elegance and minerality with which it expresses the characteristics of the famous grape variety from across the Alps. An abbey with a nearly millennia-old history, Novacella has managed to present itself as an interesting model, not only regarding viticulture but also concerning the cultivation of aromatic herbs and fruits that, together with wine sales, serve as sources of livelihood.
The white wine Sauvignon Praepositus comes from vineyards located between 600 m and 900 m above sea level. The Praepositus line was created with the intent to produce a label that is distinctive as excellence in quality, and that is therefore an expression of the best vineyards of the Abbey. The cool climate is enlivened by frequent temperature excursions, allowing for perfect aromatic maturation of the Sauvignon. The soils, rich in minerals, impart their signature to the wine with a notable salinity. After careful selection of the bunches, the grapes are fermented in stainless steel containers at controlled temperatures, where the liquid will rest for another six months before bottling.

The wine Prapeositus Abbazia di Novacella reveals itself in its straw yellow appearance, with slight greenish reflections. The nose, varied and extremely complex, is dominated by fruit of every color: the golden apple first and foremost, but also more fleshy hints of yellow peach. The second act is entirely played out by the interplay of mineral bursts with those of white flowers, which create a clear and complete picture. The sip is a millimetric fusion between the exuberant aromaticity of the Sauvignon and the elegant interpretation of the winery, a combination that gives life to a wine of international appeal. To be enjoyed with satisfaction every day, even better if accompanied by tasty seafood risottos or delicately seasoned white meats.
