The Sauvignon "Vigna Castel Ringberg" is a rich, energetic and incisive white wine, born from a single vineyard dominated by an ancient Habsburg castle, vinified in steel and in barriques. The Alto Adige white Sauvignon “Castel Ringberg” is one of the gems created by Elena Walch in Termeno. It is a true cru that maintains, year after year, a high quality standard, where the fruity complexity on the nose combines with an intriguing minerality on the palate, giving rise to a harmonious and coherent tasting experience, in which the liquid flows with punctuality. And this is precisely the beauty of this label, the habit of sipping it shortly after as if it were a wine we have been drinking for some time.

This “Castel Ringberg” by Elena Walch is a pure Sauvignon that comes from those grapes cultivated within the vineyard that gives the label its name. We are at an altitude above sea level between 330 and 440 meters, facing southeast, within a terroir characterized by dolomitic rock, limestone, and gravel. The grapes are gently pressed and the must undergoes static decantation. The subsequent alcoholic fermentation takes place both in containersof stainless steel at controlled temperature and in barriques – for 15% of the total mass –. The aging continues on this choice – stainless steel and barriques, always with the same proportions – and takes place on the yeasts for 5 months. 

The Sauvignon “Castel Ringberg” produced by the Elena Walch winery presents itself visually with a brilliant color focused on the shade of straw yellow, enriched by slight greener notes at the rim. The nose is broad and layered, rich in herbaceous scents and white flowers, from which emerge, in the finish, also more citrusy touches. On the palate, it is full-bodied, broad and enveloping, with a warm and fresh sip at the same time, which is enhanced by a beautiful minerality. A bottle that tends to gather unanimous consensus from different palates.
