"Sancho Panza" is a mountain white wine produced from Fiano vines located at 700-800 meters above sea level in Alta Irpinia. The long maceration on the skins and aging in steel give a bouquet of ripe citrus, hay, salt, and yellow flowers on a background of dried fruit. On the palate, it is fleshy, rich, and deep, with an energizing freshness

dry soil treated only with copper and sulfur. After a manual selection of the bunches, and subsequent harvesting, the bunches are transported to the winery for destemming and the start of alcoholic fermentation, which occurs spontaneously with skin maceration of about two months. The liquid ages for several months in steel before bottling, which takes place without filtration and with minimal addition of sulfur dioxide.

The Fiano Sancho Panza presents itself in the glass with a matte golden yellow hue. A kaleidoscopic and refined nose, where hints of lime zest, chestnuts, and broom are followed by a distinct smoky return, typical of the variety. Finesse and complexity, which are reflected in an even more exciting tasting. Juicy flesh, enlivened by the saline push that the liquid brings and by a slight tannic friction. Top player!
