Saffredi from the Fattoria Le Pupille winery is a rich, complex, and elegant red wine produced in the Grosseto area and dedicated to Fredi, father of the current owner Elisabetta Geppetti, who, together with the famous oenologist Giacomo Tachis, created this label, which has now become the iconic symbol of the winery. Saffredi is a Supertuscan made from a blend of predominantly Cabernet Sauvignon and Merlot grapes, with a small addition of Petit Verdot that adds color, tannin, and a bit of structure. The vineyards, located around Magliano at an altitude of about 250 meters with a southeast/southwest exposure, were planted in the early '80s and are cultivated using the spurred cordon system on soils predominantly characterized by sandstones, with little clay and low organic matter. The winery, now managed by the second generation, owns 80 hectares of vineyards and produces about 500,000 bottles a year.
The Saffredi from Fattoria Le Pupille is a Bordeaux blend made with carefully selected grapes, harvested depending on the vintage and the characteristics of the varietals, between mid-September and mid-October.grape varieties, between mid-September and mid-October. Once the grapes reach the winery, they undergo destemming and are fermented in stainless steel tanks at controlled temperatures with skin maceration for about 25 days. The next step is racking and aging the wine for 18 months in first-use French oak barrels for about 75% of the total. After the maturation period, the blend of various grape varieties is created, which may slightly vary from year to year depending on the desired final result. Fattoria Le Pupille Saffredi presents itself with a bright ruby red color, with intense and concentrated aromas of red berry fruits on the nose, predominantly raspberry, and wild berries, then shifting towards balsamic hints and spicy notes, including chocolate, vanilla, and cinnamon. On the palate, it is round, smooth, and characterized by dense tannins of great balance and a pronounced freshness that persists and enhances its drinkability. This creation by Fattoria Le Pupille is truly a splendid example of the great intuition and skill of this beautiful winery which, in the heart of the Maremma Toscana, has managed to stand out for this exuberant and spectacular version of a Supertuscan red.
