
Rum Clairin Casimir
Clairin Casimir is a rum from Haiti of pure juice of a rare type of sugar cane, cultivated in a natural paradise overlooking the sea of the Antilles. It is produced by a Creole craftsman distiller with a pot stills powered by fire and it is characterized by tropical, mineral and slightly brackish aromas
The Clairin from the artisan creole distiller Faubert Casimir is the best expression of the typical distillate from the village of Barradères in Haiti, an isolated and unspoiled territory overlooking a beautiful bay of the Caribbean Sea. It is a natural paradise surrounded by tropical forest and difficult to reach, connected to the rest of the world only by dirt paths, banana tunnels, and mango trees. Here, there are 13 small distilleries; among them, Faubert Casimir's, active since 1979, is probably the best.
The Clairin Casimir originates within the village of Barradères and seems to encapsulate the secrets of this ancient and unspoiled region washed by the sea, preserved from modernity and remaining isolated, out of time. Faubert Casimir manages a polyculture of 50 hectares, populated by banana trees, palms, lime trees, and, above all, sugar canes of ancient native varieties called Hawaii Blanche and Hawaii Rouge. The cultivation is carried out manually, with the sole aid of organic materials and bagasse for fertilization.the soil. The harvesting, cutting, and pressing of the canes are manual activities and the fermentations are wild, that is, spontaneous. It is a common practice among all the distilleries of Barrdères to add herbs and plant substances to the sugar cane must during fermentation to enhance its aromatic profile. In this case, wild anise, ginger, and lemongrass are added, and the fermentation containers are exposed for several days to the open sky.
The Carimir Clairin has been selected by Velier, within the international project The Spirit of Haiti, as one of the best among the authentic and wild agricultural white rums of the territory. Compared to other expressions of the type, it is characterized by an intense and mineral aromatic profile. The typical herbaceous and tropical notes, of palm leaf and banana combine here with marine and briny nuances, capable of encapsulating the spirit of the Caribbean sea.
