“Farrside” is the Pinot Noir By Farr made exclusively from grapes sourced from the Farrside vineyard, planted in 2001 using the clones of Pinot Noir 114, 115, 777, 667, and MV6. The plot is located on a northeast-facing slope, in a cool and breezy climate area, which encourages slow ripening and a harvest delayed by about a dozen days compared to the other vineyards.of the Estate. The vines sink their roots into a black soil of ancient volcanic origin, resting on a deep limestone substrate. At the end of the manual harvest, with selection in the vineyard of the best bunches, spontaneous fermentation with indigenous yeasts takes place in open vats, with a maceration on the skins of about a dozen days. The wine matures for 18 months in French oak barriques, with about half new and the others already used.
