The Pinot Bianco "Kristallberg" is a white wine from Alto Adige with a mountainous character, harmonious and elegant, born from vineyards located at 700 meters above sea level on dolomitic rocks between Termeno and Caldaro. “Kristallberg” is the name of a Pinot Bianco with which the Elena Walch winery aims to amaze all enthusiasts of this international grape variety. It is rare to come across such multifaceted expressions on the nose, where broad and varied notes contribute to creating an olfactory picture with countless nuances. On the palate, we then find the usual freshness expected from this grape, with a slightly more structured body due to the fact that vinification and aging are partly carried out in wood. A bottle that is born with a precise idea, and that manages to fulfill what Elena wanted.
This “Kristallberg” signed by Elena Walch is a pure Pinot Bianco that originates from vineyards located about 700 meters above sea level, characterized by a subsoil of dolomitic rock with the presence of stones and limestone. The grapes are gently pressed and the must undergoes a static decantation. The subsequent fermentation takes place both in steel barrels – at a controlled temperature of 20 degrees– and in barrique of French oak, for one third of the total mass. This choice is maintained also during the maturation process which lasts five months.
The Pinot Bianco “Kristallberg” presents itself visually with a beautiful straw yellow color, not too intense but very shiny. The bouquet of aromas surrounding the nose tells a story made of complex notes, where mountain herbs alternate with touches of white-fleshed fruit and nuances that shift to menthol and mineral. On the palate, it is medium-bodied, clear in conveying a fresh and balanced taste, very elegant. A label that the Elena Walch winery recommends pairing with flavorful recipes: fish is the traditional accompaniment, but to dare a little more, one should try it with white meats or noble poultry.
