The Pinot Bianco from Elena Walch is a delicate and elegant wine, characterized by great finesse and taste balance. The French grape variety has, in fact, acclimatized very well in Alto Adige where it expresses itself at excellent quality levels, being appreciated for its harmonious pleasantness and also for its extraordinary versatility in food pairings.
The Pinot Bianco produced by the Elena Walch winery is born from the skillful blending of grapes from different plots of the estate, characterized by soils predominantly of limestone and porphyry. Some vineyards are located at about 900 meters above sea level, on steep terrain, while others are towards the valley floor, at an altitude of about 250 meters above sea level. The union of grapes with a fresher profile, with those that are riper and richer, allows the wine to express a perfect balance and good aromatic complexity. After manual harvesting, soft pressing is carried out. Fermentation takes place in stainless steel tanks at a controlled temperature of 20 °C. The wine rests on its own yeasts in stainless steel tanks for a period of a few months before being bottled.
The Pinot Bianco is a glass of great class and elegance. It does not have the expressive exuberance of semi-aromatic grape varieties, but possesses the charm of refinement that makes it absolutely unique. It has a straw yellow color, the bouquet is particularly fine and delicate, with aromas of wildflowers, mountain herbs, and fresh, fragrant white fruit. The attack on the palate is of great balance and harmony, with a mid-palate of good taste complexity and aromatic richness. The finish is slightly savory.
