The processes still follow the best craft practices today and enhance the characteristics of a great Mezcal, capable of providing the clear aromatic richness of tropical fruit, vegetal freshness, and delicate spicy sensations. The Mezcal Artesanal Joven Maguey is offered by a famous mazcaleria, which for more generations has been dedicated to the production of this traditional Mexican distillate. Koch is a small family-run business that is now led by Carlos Moreno. Its name comes directly from an ancient variety of agave, the Ferox Koch, already widespread in the time of the Aztecs and is still used today to produce Pulque. In the Oaxaca area, numerous varieties of agave are cultivated: Barril, Tobasiche, Tepeztate, Arroqueño, Espadin, Mexicano, Madrecuishe, Cuishe, Tobala, Sierra Negra, Jabali, Pasmo, Castilla, Ensambles, and Coyote. For the creation of the Joven label, only the Maguey Espadín agave is used. The plants come from the San Baltazar Guelavila area and are harvested by hand only when they are between 7 and 9 years old. After removing the leaves, the heart is isolated, which is slowly cooked in traditional ovens. This is followed by the fermentation phase and the subsequent double distillation, which is carried out in copper stills, according to the oldest customs.
The Mezcal Joven Artesanal Maguey Koch directly and exemplarily expresses the characteristics of the Maguey Espadín agave, particularly suitable for making white Mezcal to be enjoyed young. It is absolutely crystalline, clear, and transparent. The olfactory profile offers rich notes of ripe white fruit, peach, apple, hints of tropical fruit, pineapple, mango, vegetal hints of green pepper, and freshly cut agave leaves, enriched by sensations of medicinal herbs and spicy notes of white pepper. On the palate, it is smooth and enveloping, with delicate and enticing aromas that harmoniously extend towards a fresh and pleasantly balsamic finish.
