"Rosa dei Venti" is an Emilian rosé obtained with bottle refermentation without disgorgement from Lambrusco Grasparossa grapes and small quantities of Malbo Gentile. It reveals a straightforward, lively, and artisanal profile, with a refreshing and tonifying sip, endowed with vitality, explosive freshness, and delightful drinkability. On the nose, it recalls yeasty notes, floral aromas, and the fruity fragrance of the must with slight earthy accents. For snacks, as an aperitif, or for everyday dining: definitely gastronomic! 

The Lambrusco “Rosa dei Venti” produced by Podere Cipolla of Denny Bini is a delicate red/rosé sparkling wine refermented in the bottle, made with the grapes of the native red grape variety Lambrusco Grasparossa, with the addition of a small quantity of Malbo Gentile. Thus, a sur lie sparkling wine is born with a typically Emilian face, both for the nature of the vines and for the production technique. It is an easy and pleasant rosé, simple and direct, that offers a delicate fruit and a sip very satisfying and with great expressive freshness.

The “Rosa dei Venti” Lambrusco from Podere Cipolla is an interesting interpretation of the tradition of the territory, created by Denny Bini, an original vigneron who cultivates 3 hectares in Coviolo, on the hills of the Reggio Emilia area, which rise towards the Apennines. In the small estate, the native grape varieties of the area are cultivated: Lambrusco Grasparossa, Malvasia, Spergola, and Malbo Gentile. The vineyards are managed following the regulations of organic farming, with great attention to the surrounding environmental context.surrounding and the preservation of a rich biodiversity. The Lambrusco Grasparossa and Malbo Gentile vines are about 15 years old and were planted in clay-loam soils, particularly suitable for red grape varieties. After soft pressing, the must is vinified in white in steel tanks, using only indigenous yeasts. The refermentation occurs in the bottle without final disgorgement and without filtration, clarification, or stabilization processes.

The wine “Rosa dei Venti” is a bottle refermented sparkling wine signed by Denny Bini. In the glass, it presents itself with a seductive amaranth pink hue slightly veiled and with a delicate and lively foam. The olfactory profile expresses floral aromas, with notes of wildflowers, aromas of strawberry, cherry, and small red fruits, vinous hints of must, aromatic herbs, and bread crust. The taste is pleasantly smooth, frothy and easy to drink, with a crunchy and juicy fruit that pleasantly leads to a very refreshing finish. Perfect for everyday dining!
