The scents are vegetal and fruity the taste is fresh, dry and lively.
The Lambrusco “Falcorubens Col Fondo” by Terraquilia is a sparkling red wine that expresses the ancient flavor of the Emilian tradition. It is produced using the ancestral method, that is, with spontaneous refermentation in the bottle, without the addition of yeasts, sulfur, must, or other additives. It is bottled after a first fermentation in steel that ensures the maintenance of a slight residual sugar, necessary for the natural course of refermentation in the bottle.
The Lambrusco Grasparossa grapes that give rise to the Falcorubens come from vineyards at 500 meters above sea level on the Modenese hills, cultivated in respect of organic farming in a context rich in biodiversity. The love for the land and its fruits, respect for the environment, and fidelity to ancient traditions are the criteria that guide the entire production process. In the winery, the use of modern and invasive technologies is avoided, also rejecting any type of alteration: no pumps are used, and fermentations occur spontaneously, thanks to the action of indigenous yeasts.indigenous.
The “Falcorubens Col Fondo” presents itself in a ruby red color with a pink foam and its own natural sediment: the characteristic ‘fondo’, synonymous with genuineness and tradition. It expresses itself on the nose with hints of small red fruits, pleasantly herbaceous and vegetal nuances, and winey notes that evoke the ancient scents of the cellar. The sip is fresh, dry, crisp, and lively, with excellent balance and fine, pleasant effervescence. It is to be tried with typical dishes of Emilia cuisine, such as cured meats, sausages, pasta with ragù, boiled meats, but also as an appetizer, with parmesan, or even with pizza.
