The Lambrusco dell’Emilia Ancestrale by Sebastian Van de Skype is born in Emilia Romagna on the hills of Castelvetro di Modena. The winery was established in 2020 from Sebastian's project to produce wines of impeccable quality, fully respecting the natural balances of the ecosystem surrounding his vineyards. The production philosophy is centered on the “ancestral method” and the “traditional method”, choosing to carry out the refermentation in the bottle, all aimed at continuously respecting the beauty of nature and seeking the goodness of the wines. Thanks to partner Frank Cornelissen, a renowned wine producer on Etna, Sebastian's activity has taken shape, expanding day by day.
The vineyards of the Lambrusco dell’Emilia Ancestrale by Sebastian Van de Skype are about 15 years old and are exposed to East-South-West, with constant and complete sunlight for excellent grape ripening; they extend over about 10 hectares of land, more than half of which is cultivated with Grasparossa and the remaining part with the Trebbiano. The fundamental idea is to maintain a manual approach in every process of development and growth of the plants, trying not to use chemicals or pesticides that could negatively harm the plants, and treatments are carried out following the dictates of organic farming. Once the harvest is completed, the bunches are destemmed and gently pressed; an alcoholic fermentation follows thanks to the action of indigenous yeasts in steel, and no filtration occurs before bottling.
The color of the Lambrusco dell’Emilia Ancestrale by Sebastian Van de Skype is ruby red with a lively and rosy foam. The bouquet of aromas recalls wild strawberries, cherries, sour cherries, and aromatic herbs; on the palate, it is rich, flavorful with great final freshness that invites drinking glass after glass. It is recommended to pair with traditional Emilia salami, grilled and stewed red meat, and first courses dressed with important sauces.
