The Grappa “Solera Collezione” is one of the diamonds in the vast range of the Trentino distillery Segnana. It is produced with absolutely high-quality raw materials, exclusively with pomace from Chardonnay and Pinot Nero from the fermentations of the grapes from the Ferrari winery, used to make the famous Metodo Classico Trento Doc sparkling wines. The long aging process in barrique using the Solera method, used for the famous Jerez wines, gives the Grappa a soft, complex, intense profile rich in multifaceted and elegant aromas. The “Solera Collezione” is a Grappa of absolute excellence, produced by one of the historic Italian distilleries. The origins of the company date back to 1860, when Paolo Segnana traveled from farmhouse to farmhouse with his mobile distillery mounted on a horse-drawn cart. According to the strict laws of the Austro-Hungarian Empire, in fact, the pomace had to be distilled within 24 hours of pressing the grapes. In 1982, the distillery became part of the Lunelli group, thus being able to counting on first-rate pomace, fresh and still very rich in scents and aromas. Once they arrive at the distillery, the pomace of Chardonnay and Pinot Nero are processed using discontinuous distillation in a water bath, with the method of redistillation of the lees, to obtain a product of maximum purity and finesse. The grappa ages for at least 5 months in barrique using the Solera method. The reduction of the alcohol content, to bring the Grappa to 42% vol., is achieved by adding Surgiva water, sourced from the purest high-altitude springs of the Adamello-Brenta Natural Park.
The “Solera Collezione” is the choice of those who love aged spirits in wood, with a particularly soft and evolved taste. In the glass, it presents an amber color with brilliant reflections. The bouquet is of great complexity and finesse, with aromas of soft oriental spices, candied fruit, citrus peels, pastry notes, toasted sensations, and wood. The sip is enveloping and round, harmonious and seductive, with a finish of great balance and persistence.
