The Grappa Sibona originates from the fresh pomace of the Chardonnay grape, coming from two areas within Piemonte, more precisely Langa and Roero. The distillation process begins as soon as the pomace arrives at the Sibona premises, so as not to waste precious time and to allow the concentrated aromas and fragrances to evaporate. The processing uses several copper stills powered by steam, and attention is paid to every single detail of the distillation. Once the Grappa is obtained, it is transferred for a few months into steel containers, where it remains to stabilize.
