The Grappa di Barolo Invecchiata 5 years signed by the distillery Sibona is a deep and complex distillate, with aromas on the nose that gracefully and elegantly transport us into the most vocated areas of Piemonte for the cultivation of Nebbiolo grapes, which then become Barolo. The secret of this label lies in the great quality of the pomace, where nose and palate align on a taste-olfactory coherence that demonstrates all the experience of a historic and relevant distillery like Sibona.
The Grappa di Barolo Invecchiata 5 years signed by the distillery Sibona originates from the pomace of Nebbiolo, coming from several important crus that give rise to quality Barolo. The pomace arrives at the distillery's premises very fresh and is processed on the same day of the harvest, so as not to disperse the potential aromas present within. The distillation uses copper stills powered by steam. Once the final Grappa is obtained, it is transferred to mature in steel containers for 12 years, before undergoing a further period of refinement of 5 years both in barriques and in large barrels.
The Grappa di Barolo Sibona presents itself to the eye with an amber color, characterized by a particular concentration and density. The aromas that envelop the nose tell of a generous and enveloping range, where the more woody notes alternate with the scents of sweet-dry fruit and spicy hints.
