The Grappa di Barolo Riserva “Donna Selvatica che Scavalica le Colline del Barolo” is yet another gem signed by the distillery Romano Levi. It is a label that comes from the heart of the Langhe, from which the Nebbiolo pomace destined for its production originates, telling the soul and spirit of Romano, to whom the distillery still refers in its daily operations. Simplicity, consistency, and the desire to amaze are the elements of a bottle that will never leave you indifferent.

The “Donna Selvatica che Scavalica le Colline del Barolo” is a Riserva of Grappa di Barolo that the distillery Romano Levi produces starting from the pomace of Barolo coming from the areas of Barolo, Serralunga, La Morra, and Grinzane Cavour. The pomace, fresh and still dripping with must, is immediately pressed in underground pits in order to obtain a natural maceration capable of extracting the most varietal aromas. The distillation takes place with a discontinuous copper still that operates over direct fire. At the end of the processing, the Grappa is transferred to barrelsclassical Piedmontese barrels of about 700 liters of oak wood, where it remains to rest for 38 months.

The Grappa di Barolo Riserva “Donna Selvatica che Scavalica le Colline del Barolo” by Romano Levi develops in the glass with a typically amber color, characterized by an excellent chromatic intensity. The nose is built around crunchy and fragrant notes, where the most fruity aromas blend with woody and spicy hints, recalling the aging period spent in barrel.
