The "Donna Selvatica che Scavalica le Colline del Barbaresco" is a Grappa di Barbaresco Riserva signed by Romano Levi, made from Nebbiolo pomace sourced from the areas of Neive, Barbaresco, Trezzo, Treiso, and Alba. The pomace, still dripping with must, is immediately pressed in underground pits to achieve a natural maceration, capable of extracting the most intense aromas from the grapes. The distillation process uses a discontinuous copper still, which operates over direct fire. At the end of the processing, a once the Grappa is obtained, it is transferred for 36 months to mature in oak barrels with a capacity of 700 liters.
