The Boatyard Old Tom Gin is made using a gin base that has been distilled in a copper pot still, named. The distillate matures for a period in selected Pedro Ximénez sherry casks, filled for the first time, where the natural sweetness and richness of the sherry is absorbed into our gin. To complete the process, a small amount of PX sherry is added to give our spirit a velvety smooth mouthfeel.

The Old Tom Gin from Boatyard Distillery is an original interpretation of this particular type of distillate, specifically created to enhance its profile of seductive expressive softness. The Old Tom is a variant of the classic London Dry that stands out for its sweetness component, which gives it a suave and harmonious character, intense and complex. Very popular especially during the 19th century, the Old Tom is still appreciated today by enthusiasts of tradition, who love to discover and taste all the different facets of Gin. The Old Tom Gin produced by Boatyard Distillery originates in Northern Ireland in a distillery that boasts over a century of experience, renewed by the entry of Joe McGirr, who decided to focus on uncompromising quality. The Old Tom is made starting from a base of grain alcohol and a careful selection of botanicals, including juniper berries, coriander seeds, licorice, angelica root, citrus fruits.of angelica, citrus. The extractions take place with patient infusions of herbs and the distillation occurs in a Copper Alembic Pot Still. The Gin ages in barrels previously used for the refinement of Andalusian wine Pedro Ximenez, which helps enrich the aromatic palette of the distillate. At the end of the process, a splash of Pedro Ximenez is added to the Gin, giving it color and a smooth aromatic richness.

The Gin Old Tom Boatyard Distillery is a distillate suitable for those who prefer gentle sweetness over the dry and essential freshness of the more classic London Dry. In the glass, it presents a beautiful amber color with bright and shiny reflections. The olfactory profile offers rich and intense aromas with notes of medicinal herbs, dried fruit, sultana grapes, citrus peel, caramel hints, spicy sensations, on a balsamic background of juniper berries. Velvety and harmonious, it presents itself on the palate with good complexity and breadth, leading to a deep, soft, and very persistent finish.
