It is a blend of red grapes from Burgundy with a substantial addition of white grapes, about a third of the fermenting mass, which gives freshness and interesting aromatic sensations. The glass gives off hints of citrus like tangerine, lemon, then fresh aromatic herbs on the finish. It's funky, very drinkable and light, with a rich and savory sip. Gaminot from Domaine Ami represents a brilliant insight from the two winemaker friends Willy and Paul: the synthesis within a bottle of the entire territory of the Côte d’Or and its winemaking tradition. The label can be considered, without fear of contradiction, as the quintessence of the meaning of the word “Ami” chosen as the winery's motto: beyond the friendship of the two partners and that more extended with the winemakers who supply the grapes, here the friendship between Pinot Noir and Gamay, Chardonnay and Aligoté, historically divided by policies of territorial division, comes together. The quintessential inclusive wine, made to be enjoyed.
Domaine Ami produces Gaminot through the vinification of grapes from different territories, always with attention to cultivation according to organic guidelines and creating a truly artisanal product. The blend consists of the four expressly Burgundian varieties, which have had opposite fortunes: Pinot Noir, the undisputed king of the Côte de Nuits, and Chardonnay, the sovereign of the Côte de Beaune, both present at 15%; Gamay, banned by Duke Philip the Bold, at 45% and Aligoté, the rustic variety relegated to the heights and valleys. All harvests are conducted by hand and the fermentations are spontaneous and without temperature control: Gamay and Aligoté in open oak vats, while Pinot Noir and Chardonnay in stainless steel tanks. Once the blend is made, the aging continues for a period of 12 months in used French oak barrels. Bottling is done without prior filtration or clarification, nor the addition of sulfites.
Gaminot from Domaine Ami presents an interesting ruby red color with garnet hues. The nose is rustic and immediately engaged by a fresh and tangy fruitiness of red berries, with more intense citrus nuances, suggesting lemon and orange peel. Herbaceous notes are perceived in the finish. The tasting reveals a fresh red with a light structure, which does not lack a fine and integrated tannin, with a good aromatic persistence in thefinish. A curiously unconventional interpretation of Burgundy, with a perfect taste for an aperitif of Iberian cold cuts or fatty fish like mackerel.
