The Cote-Rotie ‘Les Binardes’ from Maison Stephan represents a label of sublime charm and elegance, a genuine expression of one of the most well-known and appreciated denominations for red wines worldwide. Initially, the Domaine had 2 hectares of vineyards in the Cote-Rotie area, from which the Stephan family produced grapes to sell to local négociant wine merchants. It was only in 1994 that the first bottles were marketed under the family name, now represented by Jean-Michel and his son Romain. The production philosophy embraced by the two is based on the principles of organic farming and the exclusion of any enological additives and aids.
‘Les Binardes’ Cote-Rotie Maison Stephan comes from a blend of Syrah (90%) and the white grape variety Viognier (10%), as is traditional for the area. The vines, planted partly in 1986 and partly in 1994 and managed organically, are rooted on steep terraces located on gneiss and granite soils. Once the clusters have reached the right degree of ripeness, the harvest is done by hand and the must is fermented in stainless steel tanks, where only indigenous yeasts carry out spontaneous alcoholic fermentation. The subsequent maturation period of 12 months also takes place in steel, contrary to the widespread use of wood in Cote-Rotie. This is because Jean-Michel and Romain want to preserve the varietal and territorial characteristics as much as possible, enhancing the fresh and dynamic component of the wine. Furthermore, throughout the entire winemaking and aging process, the mass undergoes no filtration.
