The Cognac Vallein Tercinier XO Vieille Réserve Fine Champagne is a Cognac of exceptional breadth and expressive rigor capable of reflecting the consolidated experience and tradition of the Vallein Tercinier family. The Appellation d’Origine Contrôllée of Cognac, established in 1909, includes 6 crus: Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois, and Bois Ordinaires. For Cognac XO, grapes cultivated in the sub-zones of Petite Champagne and Grande Champagne are used, territories characterized respectively by crumbly soils and lands rich in gypsum. The crus of Champagne have always been considered those of the highest quality and, not by chance, the distillates produced here are also the most expensive. To enhance the image of these Cognacs, when the distillate is produced from a blend of grapes from Petite and Grande Champagne, the latter present for at least 50% of the final blend, it is possible to adopt the designation ‘Fine Champagne’.
The Vieille Réserve Cognac XO Fine Champagne by Vallein Tercinier is made primarily with Ugni Blanc grapes, 50% from the cru of Grande Champagne and the remaining 50% from Petite Champagne. The bunches are vinified in white through gentle pressing and spontaneous alcoholic fermentation lasting 2-3 weeks. Subsequently, the wine undergoes double distillation in copper stills, followed by a very prolonged aging in oak barrels, of as much as 35 years for the youngest brandy. Finally, the distillates are lightly filtered and blended before the final bottling.
The Cognac XO Fine Champagne Vieille Réserve Vallein Tercinier is dark amber in color. The complex olfactory panorama presents the characteristic rancio scent of very old Cognacs, combined with aromas of leather, tobacco, vanilla, dried fruit, lime, vine flowers, chestnut honey, and various spices. The sip is intense and enveloping, rich and deep, characterized by an extremely long finish on the notes perceived on the nose.
