The Chimbanta by Dettori is an exciting nectar, an explosion of fruit and Mediterranean scrub. Those of Alessandro Dettori, a winemaker in Sennori, in the province of Sassari, are not just bottles, but true experiences capable of redefining the vision of wine. Alessandro has the ability, like few other artisans, to bottle a territory; all this is made possible by a respectful approach towards the vineyard and nature, in which any chemical or synthetic substance is banned. Bush-trained vines of Cannonau, Monica, Vermentino, and Pascale, some over a hundred years old and able to produce fruit of exceptional quality. Magic in liquid form.
The red Chimbanta comes from pure Monica grapes, and the name of the label, produced for the first time in 2002, was born as a tribute to Paolo's fifty years, Alessandro's father. The vines are trained as bushes, some very old, and enjoy the perfect climatic conditions of Badde Nigolosu, a hamlet of Sennori. After destemming, the must is macerated on the skins for about ten days. It ages in concrete for about 24-30 months without undergoing any filtration or clarification, before bottling and no addition of sulfur dioxide.
The Chimbanta wine presents itself in the glass with a ruby red dress of clear intensity and density. The nose is an engaging liquid tale of Sardinia and explodes with myrtle, Mediterranean scrub, ripe fruit in jam, and juniper. Then at the finish, the sea opens up, in the form of iodine and briny memories. The sip is full and generous, due to a matter that denotes a natural and unforced richness. It caresses the palate without ever being complacent and lingers on the trail of a refined savoriness. Very long persistence, even in memory. Kaleidoscopic.
