The harvest is done by hand, and the grapes from the different parcels are vinified separately with soft pressing and alcoholic fermentation of the must in temperature-controlled stainless steel tanks. Malolactic fermentation is encouraged, and the liquid remains for several months to mature on the fine lees before the secondary fermentation in the bottle according to the Champenoise Method. The aging sur lie in glass lasts for at least 84 months, and the wine is finally subjected to degorgement and dosage Brut. This sparkling wine is produced exclusively in the best vintages.
