Rare winesThe Champagne Extra Brut Blanc de Blancs "Les Pierrieres" produced by Ulysse Collin is more than a benchmark in the area of Côte des Blancs. The same winemaker decided right from the start to select the best grapes in order to offer only great wines.
The soils from which this champagne comes are rich in the characteristic gypsum, craie, very calcareous, which retains large quantities of water and releases it gradually to nourish the vine regularly. The soil itself plays the important role of temperature mitigator by retaining the sun's heat during the day and releasing it at night. This is why these soils best express the characteristics of the Chardonnay grapes planted there. The Champagne Extra Brut Blanc de Blancs "Les Pierrieres" comes from vines that are about 40 years old. The alcoholic fermentation is activated by indigenous yeasts and takes place in French oak barrels for at least 6 months, with subsequent refermentation in the bottle according to the champenoise method. The wine does not undergo any treatments, such as filtration, clarification, but waits for the cold passage with the arrival of the natural low temperatures of winter. Once bottled, the Champagne Extra Brut Blanc de Blancs "Les Pierrieres" rests for up to 24 months on the lees in the cellar before being finally marketed with a low residual sugar content, to best highlight the expressive aromas of the territory.
The Champagne "Les Pierrieres" presents itself visually as a very intense straw yellow illuminated by elegant golden veins. On the nose, it expresses remarkable fragrant sensations blended with notes of butter and freshly baked bread crust. On the palate, it is clean, with a remarkable minerality and great freshness, with a citrusy finish, of a full-bodied, intense, and unique character.
