L'Initial is an extraordinary and kaleidoscopic Champagne, produced by the living legend Anselme Selosse. The name Selosse stirs emotions in every wine enthusiast, thanks to original, complex bottles interpreted in a unique way. The search for oxidation as a virtuous element and the harvesting of fully ripe grapes have become a hallmark of Anselme's style, soon to be imitated by other producers. 7 hectares located in the most prestigious areas of Champagne, such as Avize, Ambonnay, Cramant, Ay, and Oger, all cultivated biodynamically. Rare bottles, each a different masterpiece.
The Blanc de Blancs Initial comes from pure Chardonnay grapes, sourced from three different vintages as the base wines are aged following the Soleras method. The fermentation of the base wines takes place in Burgundy barrels, mostly used, only with indigenous yeasts and with the addition of a few milligrams of sulfur. Malolactic fermentation occurs naturally, after which bottling takes place for the second fermentation, which will be followed by a long aging on .
L'Initial presents itself in the glass with a deep yellow color tending towards gold, and a fine and persistent bubble. It overwhelms with its richness from the first sniff, unfolding notes of clarified butter, toasted almonds, chestnut honey, and pastry. The oxidation is perfectly integrated and enhances the liquid, which surprises with its originality. The sip is full-bodied and imposing, filling the mouth with its opulent matter but perfectly balanced by savoriness and freshness. A champagne that has the complexity of a great still white.
