Vincent Brochet presents his Champagne Extra Brut, a dry and refined sparkling wine produced from the traditional champenoise blend. The history of this family-run Maison begins back in 1721 in the Premier Cru village of Écueil, in the Montagne de Reims, a prime area for Pinot Noir. The fundamental values on which the winery is based are environmental sustainability and the craftsmanship of the production process. The first principle aims to safeguard both the health of the territory and that of the consumer, while the second seeks to ensure that the wines are an authentic expression of the terroir.
The Champagne Extra Brut by Vincent Brochet is made from a blend of Pinot Noir (80%), Chardonnay (15%), and Pinot Meunier (5%), sourced from vineyards mainly located in the Premier Cru Écueil area, on predominantly sandy soils. The process of creating the base wine involves careful selection of the grapes, harvested at full ripeness, and subsequent fermentation in controlled temperature steel tanks, with malolactic fermentation taking place. The sparkling base is then bottled for the secondary fermentation according to the Champenoise Method and, after a maturation period on the lees of between 36 and 42 months, the dégorgement and Extra Brut dosage occur.
In the glass, the Vincent Brochet Extra Brut Champagne appears a brilliant straw yellow color, with fine and persistent bubbles. The fine aromatic spectrum expresses fragrant and harmonious aromas of plum and peach, blended with notes of dried fruit. Elegant, soft, and creamy tasting, with a long citrus finish. An excellent sparkling wine as an aperitif, but it has the structure and personality to accompany pasta and risottos based on fish.
