The Champagne is produced only with Meunier grapes coming from parcels located in the municipality of Vandières, in the heart of the Vallée de la Marne region. The vines are cultivated on marl soils with a sunny exposure facing south and southeast, which favors an ‘excellent ripening of the grapes. The best bunches selected in the vineyard during the harvest are softly pressed, and the free-run must is vinified in white with fermentation in temperature-controlled stainless steel tanks. The base wines age for a few months without undergoing malolactic fermentation, to then be blended with 30% of perpetual reserve wines of the house preserved for 30 years partly in steel and partly in French oak barrels. The secondary fermentation occurs in the bottle according to the Champenoise Method, with at least 36 months of aging on the lees before disgorgement.
