"Les Rocheforts" is a Champagne from the terroir of Bissueil made with artisanal care involving spontaneous fermentation in wood and steel and no filtration or clarification. The Champagne Extra Brut Blanc de Blancs ‘Les Rocheforts’ by the skilled vigneron Etienne Calsac is a sparkling wine with a refined mineral character made by one of the most promising producers in Champagne. Since taking over the family winery in 2010, Etienne has shown a crystal-clear talent and an extraordinary sensitivity in the art of sparkling wine, founding his winemaking creed on values such as sustainability, precision, and craftsmanship.

‘Les Rocheforts’ Champagne Blanc de Blancs Extra Brut Etienne Calsac is a 100% Chardonnay from the lieu-dit of Les Rocheforts, located in the Premier Cru village of Bisseuil, in the Vallée de la Marne. Here, the soils are rich in limestone and outcropping gypsum while the exposure is southeast. The harvest is done entirely by hand and the grapes are then transferred to the winery for soft pressing followed by spontaneous alcoholic fermentation of the must, for half of the mass in oak barrels and for the remaining half in stainless steel tanks. In the same wine containers, malolactic fermentation and maturation for several months take place, at the end of which the vintage wine is added with about 30% of vin de reserve before the sparkling process according to the Champenoise Method. After at least 24 months of aging on the lees in glass, the process concludes with degorgement and dosage Extra Brut.

In the glass, the Blanc de Blancs ‘Les Rocheforts’ Champagne Extra Brut by Etienne Calsac displays a brilliant straw-yellow hue with golden reflections and fine bubbles. The aromatic bouquet offers hints of white-fleshed fruit, citrus, white flowers, and hazelnut, enriched by fragrant notes of tropical fruit and bakery. Creamy on the palate, soon invigorated by the vibrant fresh-salty backbone that leads to a long mineral finish.
