Benoit Gouez is the great name behind the creation of the “Champagne Demi-sec Ice Impérial”, the skilled chef de cave of the renowned great house of Epernay. The blend involves the union of the three classic grape varieties that have made the bubbles of the region famous, each vinified to balance the blend and in function of the precise dosage of 45 grams of sugar per liter. A majority of Pinot Noir provides the structure and the right edges, with distinctly fruity aromas; the Meunier reveals its peculiar evolved and fleshy character, capable of giving a rich and melting sensation on the palate, while the last part of Chardonnay is crucial for the notes of pronounced freshness and the tendentially aromatic touch. The use of vins de reserve up to about 30% is specifically sought to enhance the intensity and richness of this elaboration, making it particularly coherent. The color is intensely golden and the bouquet is distinctly fruity and mature, tropical and vigorous: the sip is an ecstasy of fleshy flavors reminiscent of jams, combined with the intriguing citrus pungency of grapefruit and ginger.
