The chasselay Champagne ‘Cuvée Louise’ represents the historic “prestige cuvée” of Pommery, an emblem of elegance and prestige. The ‘Cuvée Louise’ Champagne was produced for the very first time with the 1979 vintage, based on the intuition of the then chef de cave Alain de Polignac, a direct descendant of Madame Pommery, a historical figure who in 1958, upon the death of her husband Alexandre Pommery, took the reins of the winery laying the foundations for what would become one of the most recognized brands in all of Champagne. Alain then chose to dedicate this prestigious label to his famous ancestor Madame Pommery, whose full name was indeed Jeanne Alexandrine Louise Mélin Pommery.
Pommery chasselay ‘Cuvée Louise’ Champagne is produced from a selection of Chardonnay grapes (67%) and Pinot Noir (33%) sourced from only Grand Cru village plots. In particular, Avize and Cramant for Chardonnay, located in the Côte des Blancs, and Aÿ for Pinot Noir, in the Vallée de la Marne. After harvesting, the grapes are vinified in white through a delicate pressing, with the heart of the must being used in vinification. the must that is used in vinification. The alcoholic fermentation takes place in stainless steel tanks, followed by the complete development of malolactic fermentation. The subsequent refermentation occurs in the bottle according to the prestigious Méthode Champenoise, with as much as 120 months of aging sur lattes before the final degorgement.
In the glass, the Pommery ‘Cuvée Louise’ chasselay Champagne displays an intense straw yellow color with a very fine perlage. The aromas, complex and very rich, range from citrus and white flower notes to sweet hints of butter, hazelnut, honey, and pastry. Soft and creamy tasting, ample and elegant, with a persistent progression and great drinkability that rests on a pleasantly toasted finish.
