The Champagne Brut Millesime by Ghislain Payer et Fille is a sparkling wine of great delicacy, a fine wine from the land of the noble bubbles. After 13 years on the lees, the winery operates the 'dégorgement' and then proceeds to the final bottling. The result is a Champagne of great delicacy and complexity, with hints of ripe yellow fruit complemented by typical aromas of pastries and balsamic notes on the finish. The perlage is fine and delicate, in the mouth is very light, almost airy, the taste of great aromaticity and persistence

The Champagne Brut Millesime from the sparkling wine producer Ghislain Payer et Fille is a refined and captivating sparkling wine crafted through an extensive aging process on the lees in the bottle. The estate owned by Ghislain Payer et Fille spans just 4 hectares of vineyards, dedicated to the three symbolic grape varieties of Champagne: Chardonnay, Pinot Noir, and Meunier. Due to its small size, the Payer family, now in its sixth generation of winemaking with Elise, is able to directly oversee all stages of the production process, from the vineyard to final marketing, creating Champagne of great quality.

Ghislain Payer et Fille Champagne Brut Millesime consists of a blend of Chardonnay (50%), Pinot Noir (38%), and Meunier (12%), grown on the limestone and gypsum soils of the Vallée de la Marne, rich in marine fossils. After manual harvesting and careful selection, the grapes are gently pressed, and the must is vinified in stainless steel tanks, with complete malolactic fermentation. Subsequently, the sparkling base is subject to secondary fermentation in the bottle according to the Champenoise Method, where it will remain for a full 13 years aging on the lees before the dégorgement.

The Brut Millesime Ghislain Payer et Fille Champagne is pale yellow with golden reflections, featuring fine and numerous bubbles. Aromas of lemon zest, summer fruit, mint, and hazelnut describe the aromatic context, enriched by sweet and fragrant pastry perceptions. The taste, delicate and mineral, reveals a light and airy effervescence that enhances the brilliant fresh-salty component, with a notably persistent finish. A fine Champagne that pairs perfectly with French cuisine appetizers such as assorted quiche and foie gras.
