This area is known for its chalky soils, which give particular finesse to white wines. Hints of fruit and white flowers meet typical mineral notes of these northern terroirs. On the palate, it presents great elegance, lightness, and smoothness, with an important acidic backbone that supports the sip, quite persistent.
Domaine André Philippon's Chablis is a Burgundian Chardonnay with a fresh and mineral character that epitomizes one of the world's most important denominations for white wines. The producer André Philippon, who passed away in 2013, embarked on his wine adventure in 1988 after purchasing the Chateau de Fleys, with its small enclosed vineyard of just one hectare. The estate, dating back to the late seventeenth century, was the hunting reserve of the Lord of Parthenay, squire to the famous Sun King. Today, André's three children, Olivier, Béatrice, and Benoît, carry on the family tradition.
Domaine André Philippon's Chablis is made from solely Chardonnay grapes grown on Kimmeridge soils, consisting of clay and limestone and characterized by a high presence of marine fossils. After harvest, the grapes are transported to the cellar and gently pressed, with the resulting must undergoing alcoholic fermentation in stainless steel tanks. After fermentation, the wine matures for several months partly in stainless steel and partly in oak barrels, always seeking the right balance between the freshness enhanced by stainless steel and the softness imparted by oak.
Visually, Domaine André Philippon's Chablis displays a delicate straw-yellow color. The olfactory range articulates sensations of white flesh fruit, quince, and lemon zest, accompanied by intriguing floral hints of jasmine and mineral notes reminiscent of wet stone. The palate entry is very fresh, with a development that reveals gentle softness and a persistent salty-mineral trail. This Chablis is a winning match with seafood cuisine, especially with various fried dishes and pasta dishes featuring shellfish or mollusks.
