Pantun Bianco is configured as a label of surprising grace and dynamism, the result of a sustainable production vision. Although the vineyard area of the Apulian estate Pantun is mainly dedicated to Primitivo, the winery also cultivates white grape varieties Verdeca, Greco Bianco, and Minutolo, all belonging to the Apulian white wine tradition. This family-run winery is located among the high hills of Mottola, in the province of Taranto, where in 2000, the couple Jutta and Mimmo started their winemaking project to achieve self-sustainability for themselves and their friends in this beautiful patch of land rich in ravines, churches, and villages.
The Bianco Pantun comes from a blend of white grapes grown according to the principles of certified organic farming on clay-limestone soils, at an altitude of about 360 meters above sea level. The harvest is done by hand in the second decade of September during the early hours of the morning, so as not to bring overly warm grapes to the winery. The bunches are then only partially destemmed and the alcoholic fermentation takes place spontaneously in stainless steel tanks, with part of the grapes remaining in skin maceration for a period that can last up to 60 days.

The nose offers aromas of tropical fruit, wildflowers, and aromatic herbs, enriched by pleasant hints of flint. The taste development is savory and rustic, with excellent freshness that accompanies the mineral and fruity notes in the finish. The recommendation is to pair this macerated white wine with medium-aged cheeses or mixed seafood fritters.
