Ernesto Cattel, owner along with Mauro Lorenzon of the Costadilà winery, is one of those faces that is always a pleasure to meet at wine fairs, due to the jovial calmness that distinguishes him. Ernesto does not hesitate to tell you about the project and belief with which he manages his 8 hectares in Tarzo, a historic area for Prosecco, that is with the utmost respect for the vineyard, where no chemical or synthetic products are used, and the winery, where fermentations and refermentations always occur spontaneously. The wine 450 slm from Costadilà is obtained, as per local tradition, from white grape varieties. The grapes come from a stony morainic soil, located between 350/450mt in altitude with a south, south-west exposure. After the harvest, which takes place strictly by hand, the grapes are destemmed and spontaneously fermented in stainless steel containers. The sparkling process occurs with the addition of unfermented must from the same grapes, which is left to dry until March.
The Sparkling White 450 slm presents itself in the glass with an opaque golden yellow color, due to the non-filtration of the liquid. Beautiful and varied is the profile, which while maintaining simple and sunny tones, expresses notes of exotic fruit, lime, and mineral bursts. The tasting reveals a liquid light and carefree, although welcoming and soft. Freshness and sapidity drive the sip, and a very fine and almost imperceptible bubble constantly enhances the drink.
