The Barolo Chinato by Pio Cesare is a tribute to the ancient traditions of Piedmont. It is a spoices wine produced with infusion of china, herbs and spices and aging for 4 months in oak barrels. It has an intense and robust personality, characterized by freshness and by a pleasant balsamic and bitterish persistence

This Barolo Chinato is a flavored wine that develops on a concentrated weave of aromas and spices, leaving room for a sip of good freshness, characterized by a bitter final taste. An excellent quality label, which makes the Pio Cesare winery particularly proud of its recipe, unchanged since the late 1800s. This Barolo Chinato is part of a recovery of ancient local traditions, and pays homage to a true niche of the winemaking production in Piemonte, with the intent of bringing this type back to its ancient splendor.

The Pio Cesare winery produces this Barolo Chinato with a meticulous process, which requires several steps. First, for about three weeks, some small pieces of bark from China Calissaia and China Succirubra are macerated in a modest quantity of Barolo DOCG. Then, a blend of aromatic spices is added, the precise formula of which is still secret today, and is jealously guarded by the Boffa family. To the extractthe aromatic extract obtained is then added a dose of Barolo, and the final infusion is aged for at least 4 months in oak barrels.

The Barolo Chinato Pio Cesare presents itself visually with a very deep ruby red color. The range of aromas that develops on the nose tells of intense notes, characterized by herbaceous, spicy, and balsamic nuances. On the palate, it is soft-bodied, velvety, with a sip characterized by pleasant freshness and a long, persistent finish, with a typically bitter aftertaste. An ideal bottle to delight your guests after dinner, accompanying various types of desserts or why not, also to sip alone, as a meditation wine to enliven conversations.
