The 'Sous la Roche' from Domaine de la Borde is an Arbois-Pupillin made solely from Trousseau grapes from the clay and limestone slopes of the Jura region. It expresses a liquid sap of raspberries, strawberries, roses, and black pepper; on the palate, it is delicate, light, and very tasty, with a discreet structure and admirable freshness. Produced using organic and biodynamic methods, this red ages for at least 12 months in used oak barrels and, once opened, pairs superbly with vitello tonnato, grilled meats, and game.

The Arbois-Pupillin ‘Sous la Roche’ Trousseau from Domaine de la Borde is a red wine from Jura that impresses with its crisp and dynamic character. At the helm of the winery is the vigneron Julien Mareschal, who, through a sustainable and genuine production approach, aims to bring out the colorful qualities of the Pupillin territory, where he takes care of 5 hectares of vineyards.

The ‘Sous la Roche’ Trousseau Domaine de la Borde Arbois-Pupillin is a 100% Trousseau from vines cultivated on soils composed of a layer of clay and limestone over a deep red marl subsoil, also characterized by steep slopes. The agronomic management is based on the principles of biodynamic agriculture, and the plants benefit from the excellent southwest exposure and an altitude of 350 meters above sea level. The harvest is done by hand and is followed by the manual destemming of the clusters, with the grapes being vinified without being crushed to favor semi-carbonic maceration. The grapes are subjected to 2 days of cold maceration, with the subsequent alcoholic fermentation occurring spontaneously in stainless steel tanks in contact with the skins for 20 days. For the subsequent aging phase, 228-liter wooden barrels of multiple uses are adopted, containers in which the wine rests for 10-12 months until the final bottling, carried out with minimal additions of sulfites.

The Trousseau Arbois-Pupillin ‘Sous la Roche’ from Domaine de la Borde is a pure ruby red color with bright reflections. The nose is very inviting with hints of raspberry, strawberry, rose, violet, and black pepper, all supported by a refined mineral note. The progression on the palate is flavorful and lean, light and delicate in its structure, with the crisp freshness joining the ripe tannin in a persistent epilogue of fragrant sensations of flowers and red fruits.
