The Aqua Vitae from Montevertine is a true masterpiece, distillate produced from pomace of Sangiovese grapes intended for the production of a mythical wine such as Pergole Torte. Radda in Chianti, the beating heart of the well-known area, and a piece of history in Italian winemaking: it was here that in 1967 Sergio Manetti decided to create Montevertine as we know it today, with the initial intent of limiting wine distribution to a strictly confidential circle. In 1971, after the production of the first vintage, Sergio's bottles excited those fortunate enough to taste them, leading him to abandon the steel industry and dedicate himself solely to the vineyard. One cannot speak of Montevertine without mentioning Giulio Gambelli, a true master of Sangiovese who for many years assisted Sergio in the production of Pergole Torte, creating unforgettable liquids. Now at the helm of the winery is Sergio's son, Martino, who has continued without hesitation the path taken by his father.
The distillate Aqua Vitae "Le Pergole Torte" comes from the distillation of the pomace of the grapes used for the production of the winery's flagship wine, still dripping with Sangiovese. Following the distillation process, the liquid is aged in oak barrels for about four years before bottling. The perfect ripeness of the grapes from which the pomace comes, and the long passage in wood, give the distillate softness and harmony, so much so that given these characteristics, the term grappa is even reductive. A great product that stands on par with French Armagnac.
The Aqua Vitae "Le Pergole Torte" has an amber color that leans towards mahogany depending on the aging. A unique and crystal-clear nose for complexity and the sequencing of aromas, which alternate rhythmically and in succession: dried fruit, tobacco, chocolate, and hints of incense and vanilla. Richness, therefore, but always measured and never baroque. The tasting is great for its ability to combine power and softness in such a millimetric way, nectar that invades the mouth conquering it without a blow.Needless to say about persistence, hardly quantifiable in seconds. Much more than a grappa, a small jewel.
